Crocodile in Mango and Basil Sauce

Crocodile is an easy to cook meat and best cooked from frozen as if left to thaw, the process of thawing will cause a loss of moisture hence leaving the flesh dry after cooking and lacking in flavor. It is best cooked for two minutes each side then allowed to stand before serving. Try not to overcook.

Ingredients:

300grams crocodile meat, sliced thinly
30g peanut oil
20g basil leaves
20g parsley
2 large cloves chopped garlic
20ml white wine vinegar
200ml olive oil
1 mango, stone removed and peeled
salt & pepper to taste

Directions:

Heat peanut oil in a frying pan, sauté (lightly fry) seasoned crocodile pieces for about 2-3 minutes (until lightly browned)  set aside and keep warm. Place basil, garlic, parsley, vinegar and olive oil in a food processor until smooth, put to one side. Peel and slice mango thinly and arrange on plate. Place meat in the centre, drizzling basil sauce around the plate and garnish with fresh herbs. If choosing to fry the meat, use butter or olive oil and never margarine as this will cause an unpleasant flavor.
